Pavia officially declared ‘Sorbete Capital of Iloilo’

There’s now an official home of Iloilo’s beloved sorbete.

The Municipality of Pavia, with Barangay Anilao at the heart of its thriving ice cream-making tradition, has been officially declared the “Sorbete Capital of Iloilo” following the approval of Provincial Ordinance No. 2026-05-22 during the 50th Regular Session of the 15th Sangguniang Panlalawigan ng Iloilo.

The ordinance recognizes Pavia’s enduring contribution to preserving one of Iloilo’s most cherished culinary traditions. For generations, local sorbete makers have kept alive the art of producing the iconic Filipino ice cream, transforming what was once a simple street treat into a symbol of Ilonggo culture and craftsmanship.

According to the ordinance, the roots of Pavia’s sorbete industry can be traced back to the early 1900s in Barangay Anilao. Long before modern refrigeration became common, pioneering families developed innovative hand-crafted methods of making and preserving sorbete, laying the foundation for an industry that continues to thrive today.

Many of these family-run businesses have passed down their recipes and techniques from one generation to the next, helping make Pavia a recognized source of quality sorbete not only in Iloilo but in neighboring provinces as well.

The landmark ordinance was authored by Provincial Board Member Jo Jan Paul “JP” Peñol, sponsored by Provincial Board Member Nielito “Doc Darling” Tupas, and co-sponsored by Provincial Board Member Nathalie Ann Debuque together with all members of the 15th Sangguniang Panlalawigan.

Beyond recognizing Pavia’s rich heritage, the declaration is also expected to strengthen cultural tourism, support local entrepreneurs, and encourage the preservation of traditional food-making practices that have become part of Iloilo’s identity.

From colorful pushcarts on busy streets to family celebrations and fiestas, sorbete has long brought joy to generations of Ilonggos. With this official declaration, Pavia’s sweet legacy is now permanently etched into the province’s history. (via Board Member JP Penol)
