Vermillion Hotel Iloilo introduces a new dining experience — a modern Itameshi restaurant now accepting dinner reservations for its soft opening.
MANU, the new signature restaurant of Vermillion Hotel Iloilo, begins its soft opening on Tuesday, August 4, 2026. During the soft opening, the restaurant will welcome diners on a reservation basis.
MANU is a modern Itameshi restaurant. Itameshi is Japanese-Italian cooking — dishes built on Japanese precision, restraint, and balance, served with the warmth and comfort of Italian food. It is a style of cooking new to Iloilo, and MANU brings it to the city for the first time.
The menu introduces dishes such as the Gyoza Milano, a Japanese dumpling with pork, chives, and mozzarella; the Mentaiko Carbonara, with mentaiko, salmon, and nori; and the Parmigiana, breaded pork with mozzarella and Japanese curry. Familiar Japanese plates — maki, tempura, and croquettes — sit alongside them.
The restaurant is named after Guakong Manuel Sy, whose life of travel, curiosity, discipline, and appetite gives MANU its spirit.
MANU seats 50 guests in its main dining area, with a Sushi Bar, a Beverage Bar, outdoor poolside seating, and a Private Room for up to 12 guests with garden views. The interior pairs a wabi-sabi Japanese design with Italian comfort in a fine-casual setting. For the soft opening period, the Private Room is available at a promotional minimum consumable of P8,000.
Dinner is served à la carte from 5:30 PM to 10:00 PM. The restaurant is accessed through the hotel lobby. Dress code is smart casual.
