The Mansion’s new Sous Chef sets sumptuous feast on V-Day Dinner Buffet
Iloilo’s iconic hotel The Mansion has a new Sous Chef, and he is ready to assemble a sumptuous feast on V-Day Dinner Buffet at The Lobby Cafe restaurant on February 14!
The Mansion Iloilo proudly introduces Chef Carlos T. Lanzona, who’s extensive culinary expertise and youthful vibe will surely bring gracious experience and world class dining treat to Ilonggos and varied guests.
At age 15, Chef Carlos accidentally found his passion for cooking when got hold of Anthony Bourdain’s book Kitchen Confidentials, which he picked up at a rummage sale in his neighborhood. He read it cover to cover and instead of being put off by the intricate world of cooking, he began to romanticized the sub-culture of the “line cook” and decided that kt was his calling.
“If I couldn’t make it as a local icon with a band, I would do it in the kitchen teaching and learning, like Anthony Bourdain would” Carlos recalled. The year after, he enrolled at the Magsaysay Institute of Hospitality and Culinary Arts Incorporated, earning a degree in professional Culinary Arts. And the rest is history.
In The Mansion as a Sous/Outlet Chef, he is responsible for managing the activities and processes, procedures and training of cooks and other kitchen workers engaged in preparing and cooking for the hotel outlets to ensure a quality, efficient and effective food service and product.
