Some restaurants are remembered for their food. Others are remembered for the memories they create.
For one evening on July 4, Vermillion Hotel gave Ilonggos the rare opportunity to relive one of the city’s most beloved dining and nightlife destinations through “Reminiscing Freddie’s: An Iloilo Classic.”
For many who walked through the doors that night, it felt like stepping back two decades.
The walls were lined with old photographs and memorabilia of the original Freddy’s Bar and Restaurant, while a live band played familiar classics that once filled the venue with music. Guests—many of whom were regular patrons during Freddie’s heyday—shared tables, exchanged stories, laughed over old memories, and reminisced about the countless nights they had spent there.

And just like old times, the food completed the experience.
Signature favorites returned to the table, from pizza, nachos, burgers, baby back ribs, buffalo wings, and calamares to ice-cold drinks that had once accompanied celebrations, reunions, and after-work gatherings.
For one night, Freddie’s was alive again.
More than a restaurant
Long before Iloilo City’s entertainment scene expanded with lifestyle districts and modern dining hubs, Freddy’s Bar and Restaurant inside the former Sarabia Manor Hotel had already established itself as one of the city’s premier social destinations.
Opened as part of one of Iloilo City’s pioneering business and convention hotels, Sarabia Manor became a landmark where weddings, conventions, corporate events, and family celebrations were held. But beyond its function rooms and hotel rooms, many Ilonggos remember another attraction that gave the property its unique character—Freddy’s.
Inspired by the classic American sports bar, Freddie’s introduced a concept that was ahead of its time in Iloilo.

Warm wooden interiors, dim lighting, sports memorabilia, television screens showing live sporting events, and live bands created an atmosphere that was both lively and relaxed. Whether guests came to catch a basketball game, unwind after work, celebrate a birthday, or simply enjoy dinner with family and friends, Freddie’s became the place where people stayed long after the meal was over.
It wasn’t unusual to see professionals gathering after office hours, families celebrating milestones, couples on dates, balikbayans reconnecting with friends, and musicians performing songs that would become part of many people’s memories.
Its menu reflected its American-inspired identity. Long before burgers and ribs became staples in today’s restaurant scene, Freddie’s had already built a loyal following with its hearty servings of baby back ribs, steaks, burgers, pizza, nachos, buffalo wings, and other Western comfort food, paired with cocktails, beer, and live entertainment.
For many Ilonggos who grew up in the 1990s and 2000s, Freddie’s wasn’t simply a restaurant.
It became part of their lives.

A name that lived on
As the hotel evolved over the years, so did its dining concepts.
When Sarabia Manor underwent redevelopment and became The Mansion, Freddie’s was reintroduced as Freddie’s Kitchen + Bar, carrying forward a name that generations of Ilonggos had come to associate with good food and memorable nights.
The property would later enter another chapter as Vermillion Hotel, but the memories of the original Freddie’s never faded.
That enduring legacy was evident during the July 4 gathering.
Throughout the evening, guests stopped to admire decades-old photographs mounted on the walls. Some pointed to familiar faces captured in the images. Others recalled birthday parties, office celebrations, first dates, and impromptu reunions that had taken place inside the restaurant years ago.
The live music became the soundtrack to stories that had waited years to be told again.
There were no strangers in the room—only people connected by a place that had once been part of their lives.

An Iloilo classic lives on
“Reminiscing Freddie’s” was more than a nostalgic dinner.
It celebrated a chapter in Iloilo City’s social history.
While the city has embraced new hotels, restaurants, and entertainment districts over the years, Freddie’s remains one of those names that instantly sparks conversation among Ilonggos. Mention it, and stories begin to flow—about favorite tables, unforgettable performances, celebrations with loved ones, and nights that seemed to last forever.

For one memorable evening, Vermillion Hotel reminded everyone that while places may change, the memories they create endure.
And as the music played, glasses were raised, and familiar dishes returned to the table, Freddie’s proved that an institution may close its doors, but it never truly leaves the hearts of the people who made it an Iloilo classic.
